Zucchini Cake Bread

My oh so gracious neighbors have been blessing me greatly with fresh fruits and veggies from their garden.  Oh I just can’t wait till I have a garden of my own.  The joys that come from growing your own produce just seem fabulous.  Someday, sigh, I will have a massive garden and amazing fruit trees.  I will spend my summers canning, pickling, jelly’n, and eating free goodness.  Someday.  Back to the point.  I have had some zucchini for a couple of weeks now and finally got around to making some bread with it.  Oh. My. Gosh.  It is so good! I will be calling this recipe….

{Zucchini Cake Bread} 

3 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

3 teaspoons ground cinnamon

3 eggs

1 cup vegetable oil

2 1/4 cups white sugar

3 teaspoons vanilla extract

1 cup grated zucchini

1/2 cup milk

1.  Grease and flour pans.  I used four mini pans.

2.  Sift flour, salt, baking powder, soda and cinnamon together in bowl.

3.  Beat eggs, oil, vanilla, milk, and sugar together in a large bowl.  Add sifted ingredients to the creamed mixture, and beat well.  Stir in zucchini until well combined.  Pour batter into prepared pans.

4.  Bake for 50 (ish) minutes.  Cool in the pan on rack for about 20.  Remove from pan and completely cool.  Or if you are anything like us, you won’t be able to wait for it to cool, so just go ahead and dig in.  

Bonus:  This “cake” bread freezes wonderfully.  We ate one loaf in about 10 seconds flat.  I quickly wrapped the remaining loafs up and threw them in the freezer before the ole’ hubster got ahold of another loaf.  I figure we’ll pull it out on a “special” occasion.

Chore charts are becoming something that is very needed in our home.  My boys are certainly old enough to be helping and generally do a great job when I ask them to help, but I am guessing they will do an even better job if there is an obvious reward for their work.  I found a great resource online for making chore charts.  It is called Goal For It.  Go check it out by clicking here.

First you will need to set up an account, and then it is just 4 simple steps to printing off a completely personalized chore chart.  You can chose from about 10 different templates ranging from this….

After you have chosen your template, choose the chores you want on your chart. There are many different choices with pictures included so that if your child is unable to read, they have no excuse.  Pictures tell all.  If you have a chore that isn’t listed, you can make your own.  Perfect!!!

My plan is this:  

I am going to assign a reward amount to each chore that is on the boys chart.  For example, making your bed will be worth 1 point.  If they do it, I will give them a glass marble to put into their chore jar. When their chore jar is full they will get to buy a new toy or something fun of that nature.  

So get on it!  And let me know how it goes.  I am just hoping J will respond to something like this.  He is much more hard headed than H who I KNOW without a doubt will eat this up.   If you have your own way of getting your kids to do chores, please share!

Cold and Flu Prevention

Cold and flu season is quickly approaching.  I am pretty sure it has already hit where we live.  Everyone seems to be sick, including us! No Bueno!!  Our local health department is hitting the prevention scene hard core.  I was given some information on prevention that I thought would be good to share with you:

6 Prevention Tips

1.  Wash your hands!

Most cold and flu viruses are spread by direct contact. Someone who has the flu sneezes onto their hand, and then touches the door knob, you touch and now have those germs. Wash your hands often.  Before and after eating, after working, after visiting the toilet, after handling trash, after touching wounds, boils and cuts, after blowing nose or just after handling dirty stuff. Wash, wash, wash!  A good idea to help make sure your young children wash good enough.  Make them sing through the ABC’s.  When they are done singing, they are done washing.  

2.  Do not sneeze or cough into your hand.

sneeze_storyGerms and viruses cling to bare hands.  When you feel a sneeze or cough coming, use a tissue, then throw it away immediately. If you don’t have a tissue, turn your head away from people near you and cough into the air.  And remember, after you sneeze, WASH THOSE HANDS!

3.  Avoid touching your face.

imagesGuilty!  I am the ultimate face toucher.  No wonder I am sick!!   You should avoid touching your eyes, nose and mouth. If you blow your nose or cough, wash your hands immediately.  These nasty  cold and flu viruses enter your body through the eyes, nose, or mouth. Touching their faces is the major way children catch colds, and a key way they pass colds on to their parents.

4.  Drink PLENTY of fluids.

Our bodies naturally need eight 8 ounce glasses of fluid a day.  If you are sick you should be drinking much more.  Water flushes our systems, washing out the poisons as it re-hydrates you.  So what is the best way to know if our bodies are getting enough fluid?  The color of your urine.  If it is dark yellow, you need more.  If it is light, you are drinking enough.  

5.  Get some fresh air.

I struggle being cooped up inside for too long.  A regular dose of fresh air is important, especially in cold weather.  Central air tends to dry you out and makes your body more vulnerable to cold and flu viruses. Also, when you are stuck indoors, your germs are stuck indoors.  

6.  Eat healthy, energizing food.

Eating the right foods will give your body the energy it needs to fight off germs.  Some food that will benefit you greatly including dark green, red and yellow veggies along with fruit.  There have also been some studies that say eating a daily cup of low-fat yogurt can reduce your susceptibility to colds by 25%.  

Veggie Peak-A-Boo

Who doesn’t love hot dogs mixed in their mac & cheese?  Could there be anything better?  I may be slightly kidding, but it is decent enough to eat on those nights when you have a mental block and don’t know what to make for dinner.  When I was in college, my awesome grandma would tell me she was cooking dinner and this is what it would be. Hot dogs mixed with some mac & cheese.  Pretty fancy, eh? Well, I was feeling bad because my boys hadn’t eaten many veggies for the day.  I spotted a zucchini sitting on my counter and had a light bulb go off in my head.  I shredded the zucchini and added it to the mac & cheese.  Brilliant!  Want to know what would have been even more brilliant? Peel the zucchini first.  My boys took one look at the “green stuff”  and paniced.  After enticing them to try it, they loved it and chowed down.  So to save yourself, just go ahead and peel the zucchini first.

Shake Shake Shake

I am not going to lie.  Sometimes I struggle to find fun activities to do with my kids.  I really try to do at least one fun project/play thing my boys each day.  Most days we succeed.  Others we don’t.  

On those days that I struggle find the motivation for an ultra awesome time hogging project (like the other day) we do something quick and easy like this treat.  The best part about it, is that my boys had no idea that it was one my off days.  

Grab a plastic baggy and go to town throwing what little fun treats you have in there.  Our consisted of the mini marshmellows, pretzels, chex cereal,  and M&M’s.  Really though, anything would be good. Make sure your bag is good and closed, let your kids do the booty dance, and you’ve got yourself a treat (and in my case, my project/play thing done).

Magic School Bus

Magic-School-Bus

We love the library.  Sadly, because of preschool, we miss the story time but we still try to go regularly.  A couple of months ago we checked out a Magic School Bus DVD that my boys la-la-loved! They’ve been begging me since then for more, but sadly they are always checked out.  Well, we hit the jackpot this week and walked out with 3 (cha-ching) Magic School Bus DVD’s and our TV has been going ever since.

I had no idea these movies were so educational!  The boys are currently learning about the human body and they love it.  As we were eating breakfast H started to tell me all about the different parts in his body and I am pretty sure he didn’t learn it from me.  I give full credit to the Magic School Bus.  

I did a search and found that Scholastics has a whole site dedicated to the Magic School Bus including games, tours, parent and teacher links, and much more!  Sadly, we are having a bit of a sick day. Luckily for my boys, they will probably get to waste the day away playing the games and watching the movies.  Should I feel bad about not getting out of the house even though we are sick?  I will.  I just don’t do well sitting on my kester all day, but at least my boys will have a somewhat productive sick day inside full of Magic School Bus, homework, and some other projects I’ve got lined up.  Meanwhile, I am off to bleach everything in site!  We will not let this flu/cold bug get us down (positive thinking, right?)

The Letter I

DSC04953Sorry for the picture…Its horrible…I know.  After we did this project we went and got some delicious ice cream!  If you check around you might be able to find a fabulous deal now that summer is ending.  We have a local joint in town that is doing .99 cones (2 scoops of goodness) now that school is in.  Oh yum.  Would it be bad to go daily?

Crayons

Crayons break easily.  If your kids are anything like mine, they don’t like to use the broken crayons, so they go to waste.  Here is a fun idea on making new crayons that your kids will love….

{First}  Take the paper off of all your broken crayons.

{Second}  Put your broken crayons in a cupcake tin.  You can do them by color or just randomly.  We did a little of both.  To be honest, the more random the colors are, the more fun they are when it is done.

{Third}  Put in the oven at 200 degrees for 25 minutes.  After 25 minutes, put the cupcake tin in the freezer for about 10 minutes.  When your crayons are solid, they will pop right out of the pan with a little tap on the back of it.

{End Result}  Lots of fun new crayons.  My boys can’t seem to get enough!DSC04974

Peanut Butter and Banana Muffins

Peanut butter is my weakness.  I eat it way more than I should, but I just can’t seem to get enough.  I was looking through my Deceptively Delicious cookbook the other day and knew I had to try these Peanut Butter and Banana Muffins mainly because of the peanut butter in them.  They are scrumptious.  How could they not be though?  

{Peanut Butter and Banana Muffins}

1 cup firmly packed light or dark brown sugar

1/2 cup peanut butter

1/2 cup carrot or cauliflower puree (I used carrot)*

1/2 cup banana puree**

1 large egg white

1 cup whole-wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

*To puree your veggies:  Steam, then throw them in the food processor until smooth.

**To puree for banana:  mash with a fork then put in food processor until smooth.  It will look like baby food when it is done.  

{Step 1}  Preheat the oven to 350 degrees.  Coat a 12-cup muffin tin with cooking spray or line with pper baking cups.

{Step 2}  In a large mixing bowel, mix 1/2 cup of brown sugar with the peanut butter, the vegetable and banana purees, and the egg white, using a wooden spoon.

{Step 3}  Put the flour, baking powder, baking soda, and salt in a bowl and stire.  Add to the bowl with the peanut butter mixture and stire just to combine (the batter will be lumpy- do not overmix).  Add the remaining 1/2 cup of brown sugar and stir once or twice.

{Step 4}  Divide the batter among the muffin cups and bake until the muffins are lightly browned and a toothpick comes out clean when inserted into the center, 15 to 20 minutes.  Turn the muffins out onto a rack to cool.

{Step 5}  Store in an airtight container at room tempurate for up to 2 days, or wrap individually and freeze for up to 1 month. Personally, I like them better cold.
