On cold winter days, instead of making a PB & J for your children, make a PB & J french toast sandwich. Your kids will love this new twist on an two old classics.

PB&J French Toast

PB & J French Toast

6 slices whole wheat bread
1/2 cup peanut butter natural no sugar added
1/2 cup jelly low sugar or whole fruit
2 eggs (1 whole 1 separated)
1/4 cup skim milk
1 tsp sugar or sugar substitute like Splenda
1/2 tsp vanilla

Take 3 slices and spread with peanut butter, spread jelly on the remaining 3 slices. Combine slices and leave whole or slice in halves diagonally.

Combine 1 whole egg and 1 egg white. Add milk, sugar and vanilla and mix with a fork until slightly frothy.

Heat skillet over medium heat and spray with cooking oil. Dip sandwich in egg mixture and place on skillet. Brown on both sides and enjoy!


In The Pantry

Keep a lite Balsamic Vinaigrette in your refrigerator. My favorite is Newman's Own which has a great balance of pepper and herbs. Use this as a marinade its great with beef and chicken. Just marinade for 1-2 hours and grill, saute or bake which ever is your favorite. It is also a great lite dressing for salads as well. My favorite is tomato and mozzarella salad with this dressing.

Tomato and Mozzarella Salad

1 lb tomatos Roma, Cherry or Vine Ripened work best
8 oz cubed skim milk mozzarella
1/3 cup lite Balsamic Vinaigrette
(optional) 2 T fresh basil leafs sliced into ribbons

For Roma or Vine Ripened tomatoes cut into wedges and place in large bowl. Add cubed mozzarella and fresh basil(optional) and toss with vinaigrette.

Great on a warm or cold day.
